These days we are ALL busy. No matter if it's working many hours, raising children, taking care of the home, or a combination of all of these and more. The bottom line is that we don't often have a lot of time to make dinner.
Appliances like slow cookers, instant pots and air fryers have made cooking delicious but quick meals a much more obtainable goal for the average person. It's actually helped turn many of us who may have never really enjoyed cooking into cooks! We often branch out into other types of cooking as well. For me personally, it wasn't until I met my husband that I showed more of an interest in cooking. I wanted to make delicious healthy meals for both him and I. When I became a mother, I expanded my cooking and baking even more, creating from scratch more often. I'm an artist with paint and brush, so why couldn't I become an artist in the kitchen?
With the high cost of everything since the start of the pandemic, many people are looking for ways to save money. Pantry challenges are on the rise. These are when you create meals exclusively with food items that you already have on hand. You could be creating a meal from scratch with those ingredients, or following a recipe that has most of the same ingredients. You could also do a pantry challenge for a night or two or a full week.
This is my first pantry challenge and I'm looking forward to trying a full week soon since I keep lots of staple pantry items already on hand.
It all started with a sirloin tip roast purchased in July of 2020 that I wanted to use up. I portion and vacuum seal all of the meats that we buy so that I can buy them when they are on sale or at the best price. This is the vacuum sealer that I use.
I also had a few bags of frozen carrots that I wanted to use up and I had a bumper crop of potatoes that I do not want spoiling so a pot roast was the perfect solution.
Not every recipe that I make is a recipe that I or a family member has created. I also have a binder full of recipes that I've printed and tried from online.
The recipe that I'm sharing today was created by Tiffany of Creme de la Crumb and I'm sure you guessed by the title and top image that it's for a slow cooker roast! I LOVE the slow cooker because it's a set and forget or drop and go type of cooking. It's PERFECT for busy people!
This is a simple slow cooker roast and I have included a link to Tiffany's beef gravy recipe as well.
These recipes are great for any time of the year but especially as an added meal for Thanksgiving, for the holidays or a family fall or winter get together.
