Recipe: Portuguese Steak and Rice

One of my favorite meals growing up and still to this day is my mom's steak and rice. A tender thinner cut steak nestled against a bed of soft rice and topped with onion and a thin tomato based sauce tasting of spices, garlic and onion. Sprinkled with a little celery salt and served with a soft warm Portuguese bulky roll with butter. Just thinking about this meal, not only makes my mouth water, but it brings back good memories of my family around the dinner table. It wasn't until I moved out on my own and asked my mom to copy some of her recipes, that I discovered that this recipe had been in the family for over 70 years. My mom told me that her grandmother (my great grandmother) made this meal for as long as she could remember. My great grandmother was Portuguese and arrived in the United States in the very early 1900s from the Azores. While sadly, not many Portuguese dishes survived in later generations in our home, this is one that did survive. M

Recipe: New England Clam Chowder

The New England weather is starting to turn cooler and it's the time of the year that I start incorporating soups, stews and chowders into my meal plan a bit more often. New England Clam Chowder can be eaten year round. You often find it in restaurants in New England (and beyond) as both an appetizer or an entree. It might be paired with Rhode Island style clam cakes (clam fritters) oyster crackers or saltine crackers. This recipe is for a thick and creamy clam chowder. Not the thin broth like Rhode Island Clam Chowder or the Red Manhattan Clam Chowder. It's a very easy meal to create and it's great for family, to make for a work or party potluck. It can also be frozen to eat at a later time. This recipe is a mix of fresh and canned ingredients. You'll see that in my video I used unsalted and low sodium whenever possible because we try to cut back on the salt in our house. However any of the condensed soups mentioned will work, not just the specific ones I used. W
